Although they seem like classical Japanese knives used by Japanese food chefs, this set, which consists of a double-bevel chef's knife and a pairing knife, is an ARTISANAL original "authentic cutlery."

The blades are pure Japanese knives made with traditional craftsmanship, and to prevent rusting, the oxidized black areas of the black are left intact, known as kurouchi.
When compared to stainless steel knives, you can feel a different kind of sharpness. High-quality rosewood is used for the handles.

Inside the handle, Japanese whitebark magnolia is stuffed as a cushioning material, which allows the blade to fit into the handle without bending.

Smithing Workshop Iwai Cutlery is an Echizen-style blade manufacturer where trained traditional artisans craft each work with great care.

In this day and age, there are not many craftsmen who have inherited smith welding, fire polishing, and forging techniques. Utilizing only their instincts that they have honed over the years, they use their own bodies as a tool to craft everything with their own hands.

Iwai continues to preserve methods that have been passed down for three generations, and they make cutlery that meets the demands of the customers so that they can use it for life.

Yamaken Woodworks

Since its establishment in 1912, Yamaken Woodworks, in addition to creating wooden bowls for pottery wheels, has continued to support manufacturers of Echizen-style cutlery as a provider of "handles for cutlery."

In recent years, they started a project called "E to E", which involves painting lacquer and maki-e on knife handles.

They hope that this will elevate the position of knives from craft to art and unlock new possibilities for traditional craftsmanship.
